Chewy Ginger Honey Cookies Recipe (48)
The way this recipe is written can be very troublesome for an inexperienced baker. First of all, the recipe calls for baking soda, but baking powder is mentioned in the instructions. Second, the recipe calls for honey but this ingredient isn’t mentioned in the instructions. Moreover, the instructions say to preheat the oven in the first step, but the dough needs to be chilled for quite sometime (about 1.5 hours) before baking, so why keep the oven on that whole time?
To the inexperienced baker: it is baking soda, add the honey with the egg, and don’t preheat your oven until 15 mins before putting the cookies in.

      Aarthi,
I’m trying out you recipe today. A couple of things I noticed as I was mixing up the ingredients. In the list of ingredients you say baking soda. Then in the typed instructions you say baking powder. I had to research another recipe to see which might be correct. I went with baking “soda”. Also, in the typed instructions you do not state when to add the honey. Being an experienced baker, I figured it out. Perhaps you could correct these two items. It would be helpful for new bakers.

    FAQs

What is the secret to chewy cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

Why didn t my ginger cookies crack? ›

Not enough leavening (it needs to be strong enough to crack the top once it's set) Using a single-acting baking powder (double acting gives extra rise when it gets heated) Not creaming the fat long enough (creaming cuts little air pockets into the fat, which means the leavening has to do less work)

What makes cookies chewy vs crunchy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What's the difference between ginger snaps and ginger cookies? ›

Ginger Snaps are simply a variation of the traditional Gingerbread cookie. They're known for their crisper quality; their “snap” if you will.

What are 3 factors that contribute to a chewy cookie? ›

    • Brown sugar is key. Brown sugar has molasses in it which is like a more liquid ingredient. ...
    • Use baking soda / powder. It helps give your cookie a little rise which makes the center a little more chewy/cakey hence sort.
    • Freeze your cookie dough before scooping.

Do you need more or less eggs for chewy cookies? ›

The extra egg yolk helps to add more moisture and richness, for a soft and chewy texture. The other trick is found in the size of the dough ball…. a whole 3 tablespoons in each! This creates larger cookies that spread out perfectly with ultra-soft centers.

How do you know when ginger cookies are done? ›

Toothpick Test – This is one of the most common ways to check cookie doneness, and it can be used for many other desserts as well. Insert a toothpick into the centre of a cookie. If it comes out with a few moist crumbs clinging to it, the cookies are done.

How to get cracks in ginger cookies? ›

A heavy amount of baking soda interacts with the molasses in this recipe to encourage spread. This allows cracks in the dough to develop where moisture escapes, creating that beautiful crackled appearance and crunchy texture. Ensure your baking soda is fresh and active – learn more about that here.

Why are my ginger cookies so hard? ›

Keep in mind that the longer the cookies bake, the harder and crunchier they'll be. For soft gingerbread cookies, follow my suggested bake times. Allow cookies to cool for 5 minutes on the cookie sheet.

What does brown sugar do in cookies? ›

Brown sugar, meanwhile, is dense and compacts easily, creating fewer air pockets during creaming—that means that there's less opportunity to entrap gas, creating cookies that rise less and spread more. With less moisture escaping via steam, they also stay moist and chewy.

Why do you put corn syrup in cookies? ›

So, when you mix corn syrup into your cookie batter, all of that moisture will make and keep your baked cookies deliciously tender. The texture of cookies benefits from corn syrup as well. As you combine your ingredients to make your cookie batter, corn syrup will pull some of the surrounding air into your batter.

What is a ginger cookie called? ›

In Canada and the United States, the cookies are usually referred to as ginger snaps.

Is Biscoff a ginger cookie? ›

Speculoos, the cookie family to which Biscoff belong, are often described as a type of gingerbread, but that's a little misleading. Aside from their use of caramel sugar, speculoos don't have quite the same bite; their spice blend tends toward aroma rather than heat.

What is the difference between ginger cookies and molasses cookies? ›

Gingersnaps typically have a crisp, snappy texture and a spicier, more pronounced ginger flavor, while molasses cookies are soft with a deeper, rich molasses flavor. Can this dough be frozen? Definitely!

How do you make cookies stay soft and chewy? ›

Baking at 375 degrees F as opposed to a lower temperature will help cookies stay soft: they'll bake faster which means they aren't in the hot, drying air of the oven too long. Pull the cookie sheet out of the oven when the cookies are just set: underbaking is better than overbaking.

How do you make cookies soft and chewy again? ›

Another way to soften cookies is by placing the cookies in an airtight container with a damp paper towel. The paper towel will release moisture and help to soften the cookies without making them too soft or mushy. Another way is to place the cookies in a plastic bag with a slice of apple or a damp tea towel.

What does adding an extra egg do to cookies? ›

Because egg yolks contain lecithin and fat, they enrich the flavor and texture of chocolate chip cookies. If you prefer your cookies chewy rather than crispy, adding extra yolks will create a softer and more tender final product, and you can even save the extra whites for another dessert or dish.

What makes cookies chewy butter or shortening? ›

But, it turns out that margarine or vegetable shortening is the secret to chewy cookies. I still make mine with butter, though.
